Homestead Black Bean Soup

Ingredients

  • 2-3 cloves garlic, minced
  • 1 lb dry black beans
  • 4 cups chicken stock
  • 1 cups water
  • 1 medium white onion, diced
  • 2 bell peppers, diced
  • 1.5 tsp cumin
  • 1.5 tsp chili powder
  • 2 tsp salt

Toppings

  • Sour cream
  • Fresh chives
  1. Soak beans overnight (slow way) or bring 6 cups of water to a boil, add beans and boil for 2 minutes. Turn off and let beans soak for 1 hour.
  2. Combine chicken stock, water, hydrated beans in stock pot. Cover and simmer for 1 hour.
  3. Add onion, peppers, cumin, chili powder, salt. Continue to simmer for another 30 minutes or until desired consistency is reached.

Makes 2 quarts
